Fish is a healthy choice -low in saturated fat and packed with vitamins and minerals. Tangy marinated fish on the barbecue served with penne pasta is a great way to add healthy and delicious food to your weekly menu.

Ingredients
2 teaspoons finely chopped fresh dill
½ teaspoon lemon-pepper seasoning
½ teaspoon sea salt (optional)
¼ teaspoon crushed garlic
4 salmon fillets, about 750 g total
3 tablespoons chicken or vegetable stock
3 tablespoons vegetable oil
3 tablespoons soy sauce
3 tablespoons finely chopped spring onions
1 small lemon, thinly sliced
2 onion slices, separated into rings
Method
Sprinkle the dill, lemon-pepper, salt and garlic over the salmon fillets evenly. Place the fillets in a large plastic bag or shallow non metallic bowl.
In a small bowl, combine the brown sugar, stock, oil, soy sauce and spring onions; pour over the salmon and turn to coat. Seal bag or cover bowl and refrigerate for at least 1 hour, turning once.
With hood closed, place a roasting dish over the grill. Preheat a hotplate to medium - high heat. Sear salmon fillet on the hotplate for 20 seconds on both sides. Place the salmon fillets into the roasting dish, skin side down, then arrange the lemon and onion slices over the top of the salmon. Close the hood and cook with indirect heat for 20 minutes or until fish flakes easily with a fork. Serve immediately.
